A brilliant breakfast recipe.

A great one for the weekend, or I would even get up 20 minutes earlier to make this on a weekday to make this yummy breakfast.

Its going to keep you satisfied until until lunchtime I promise. I even eat it for lunch sometimes. Yep I'm crazy like that.

This bowl was inspired by one of my favourite cafes - porch and parlour in Bondi. They features in my health Sydney guide too which you can check out here:

Green Bowl

Ingredients:

1/2 cup of quinoa

2x handfuls of greens - I used kale and spinach

1/4 cup of cherry tomatoes

Tablespoon of goats cheese

1/4 avocado

1 egg

Slice of lemon

Teaspoon of olive oil

Method:

Soak the quinoa in filtered water for 15 minutes.

Once soaked put a lid over the pan and put on medium heat for 15 minutes. Whilst this is happening…

Heat the olive oil up on a low heat in a frying pan.

Add the kale and sautee until soft.

Add the spinach to the kale and stir until the spinach is soft.

Boil some water and put on the stove. When the water is boiled add the egg and time for 6 minutes.

Chop the cherry tomatoes in half and prep your avo.

Once the quinoa has reached 15 minutes turn off the heat and place a tea towel over the pan. Leave for a minute.

Once the egg has reached 6 minutes take it out of the water using a slotted spoon and place it in a bowl of cold water.

Pop the quinoa in a bowl, top with your greens, add the cherry tomatoes, avocado and goats cheese if using.

Peel your egg and add to your bowl.

Drizzle with olive oil, salt, pepper, and a squeeze of fresh lemon and dig in!
